    Superfood Smoothie Bowl- Easy Lunch!

      Busy mom life at lunchtime :  – Eating PBJ crusts  – 2 bites of chicken nuggets  – 4 leftover baby carrots  – grabbing a banana mid diaper change  – forgetting to eat  – falling into a heap of exhaustion at 9 pm realizing 4 loads of laundry need to be folded  Y’all.  I’m T.     We challenge ourselves to do a meatless Monday in this house because it gets us out of our grilled chicken and ground turkey comfort zone.  Sometimes I get that “look” from my husband.  The look where I put his plate in front of him and he looks at me with that head cocked suspicious puppy look- like “what are you trying to get me to eat”?     Lentil Stew (Crockpot)

    Seven Layer Taco Dip (Clean Version)

    I put my hand upon my chip.  When I dip you dip we dip!   Happy taco Tuesday!  One of my favorite things in the entire world is tacos!  And dips.  So it only made sense to combine the two!  This is the vegetarian version but you can add ground beef or turkey and layer it on the bottom for some added protein!  A little fresh cilantro on top and this is a healthy appetizer or a one dish dinner!     Quinoa Stuffed Mini Peppers

    Easy. Simple. Delicious.   An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack.  This was one of those “come together” moments.  I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born!  Enjoy!  Ingredients:  6-8 mini peppers 2 c steamed chopped kale  1 c cooked quinoa 1/4 c (extra) diced peppers & red onion Feta cheese, optional  Directions: Cook quinoa according to package.  Steam kale until dark green.   Sauté extra diced peppers and onions in skillet with 2 tbsp water.  Slice mini peppers in half, top to bottom.…

    Easy Egg Muffin Cups

    Breakfast is a disaster at our house.  One kid off to first grade. One momma off to nursing school.     Vegetarian Quinoa Black Bean Bites
