Easy Chicken Burrito Bowls

We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend.  I mean, wow.  Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven.  We ate there twice.  Then we found Nashville Street Tacos… agghhh!  More deliciousness! I couldn’t get enough southwest style fare (yeah, in Nashville, I know).  So when we got home I decided I was going to throw in a few similar style southwestern flair dinners for this weeks menu. Last night we did a deconstructed chicken burrito.  It was heavenly.  One happy husband, and three happy kids. And I had to stop myself from going back for seconds.  This is a great lower carb, protein packed, all-in-one dinner that fills you up and doesn’t overload with calories!  And it’s 21 Day Fix friendly too!

EASY CHICKEN BURRITO BOWLS:
Ingredients: 
2 c cooked brown rice
1 can cooked black beans
1 c cooked frozen corn (optional) 
4 chicken breasts, grilled (marinated in juice of 1 lime, dash of sea salt, and 1 tbsp chili powder)
3 c romaine lettuce, chopped
1 avocado, quartered
1/4 c low-fat plain Greek yogurt
1/2 c all natural salsa
Directions: 
Scoop 1/4 c brown rice, 1/4 of black beans, & corn into a bowl.  Top with 1 c romaine lettuce, one chicken breast, diced, 1 tbsp low-fat Greek yogurt, 2 tbsp salsa, and 1/4 of avocado.  Enjoy!  
For 21 Day Fix: 
1 green, 1.5 yellow, 1/4 purple, 1 red, 1 blue
