Some mornings call for breakfast casseroles. Today was one of those mornings. Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it. Day 24 of Whole 30 and I still haven’t had bacon. Not that there’s anything against bacon. I just know how much of it I’ll eat. It’s shameful. One thing about meal prepping is having easy sides to pick and choose from. Those tend to be more time consuming than preparing an actual meal at times. One of my favorite things to prep on a Sunday is a pan of roasted veggies that will carry us through for a couple meals. I do this a couple times each week, and they always turn out amazing.
