Sautéed Kale and Tempeh Salad
We challenge ourselves to do a meatless Monday in this house because it gets us out of our grilled chicken and ground turkey comfort zone. Sometimes I get that “look” from my husband. The look where I put his plate in front of him and he looks at me with that head cocked suspicious puppy look- like “what are you trying to get me to eat”? Well. For a man who grew up his whole life hunting and eating wild game, I’m pretty impressed when he tries what I make, even if it goes against his caveman ways! Kale and tempeh sautée was one that I didn’t expect him to…

Lentil Stew (Crockpot)
No meat Friday! Lenten season for us. That means no chicken, beef, pork, turkey, etc. Fish is fine. But a husband who isn’t a big fan of seafood, my options can get pretty limited. I’ve been playing around with lentil recipes and this is my new favorite! Husband approved too! I hope you enjoy! Ingredients: 1 cup red lentils 4 c organic vegetable broth 3 celery ribs, diced 1.5 c diced carrots 1/4 c chopped yellow onion 2 garlic cloves, minced 1/2 tsp sea salt 2 tsp oregano 1 bay leaf Black pepper to taste 4 tbsp low fat Greek yogurt (optional) Directions: In a medium crockpot (sprayed with…

Seven Layer Taco Dip (Clean Version)
I put my hand upon my chip. When I dip you dip we dip! Happy taco Tuesday! One of my favorite things in the entire world is tacos! And dips. So it only made sense to combine the two! This is the vegetarian version but you can add ground beef or turkey and layer it on the bottom for some added protein! A little fresh cilantro on top and this is a healthy appetizer or a one dish dinner! Enjoy! Ingredients: 2 cans organic refried beans 1 lb ground turkey/beef (optional) 1 16 oz jar all natural salsa 1 16 oz container lowfat plain Greek Yogurt 3 c romaine lettuce,…

Quinoa Stuffed Mini Peppers
Easy. Simple. Delicious. An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack. This was one of those “come together” moments. I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born! Enjoy! Ingredients: 6-8 mini peppers 2 c steamed chopped kale 1 c cooked quinoa 1/4 c (extra) diced peppers & red onion Feta cheese, optional Directions: Cook quinoa according to package. Steam kale until dark green. Sauté extra diced peppers and onions in skillet with 2 tbsp water. Slice mini peppers in half, top to bottom.…

Easy Egg Muffin Cups
Breakfast is a disaster at our house. One kid off to first grade. One momma off to nursing school. One daddy off to work, and sometimes two little kids off to daycare when Grandma’s not here. I don’t have time to make 5 different breakfasts. I don’t have time to make my own breakfast some days but it’s the most important meal of the day so I don’t allow myself to skip it. This is where meal planning comes into play. Because we try to eat clean, natural foods and avoid artificial ingredients at every opportunity, a fresh, healthy breakfast is important to us. So a little time this morning…

Vegetarian Quinoa Black Bean Bites
One of my favorite recipes and perfect for meatless Monday! We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well.
