    5 Ingredient Taco Stuffed Peppers

    No frills.  No B.S.  5 simple, clean ingredients, for a simple, clean meal.  If you want to add some extra spice to your taco meat, try my made-from-scratch taco seasoning below.  Ingredients:   4 medium bell peppers 1 c cooked quinoa 1 lbs lean ground turkey/chicken 1/2 c natural salsa 4 tbsp low fat Mexican shredded cheese Directions:  Slice peppers in half, remove seeds.  Bake in oven for 10 min at 350*.  While peppers are baking, brown ground turkey/chicken in skillet and add salsa.  Mix in 1 c cooked quinoa when turkey/salsa mixture is cooked.  Scoop mixture into peppers, overflowing.  Top with 1 tbsp cheese each.  Return to oven and bake…

    Perfect Autumn Secret Ingredient Chili

    As soon as those leaves start falling, I’m busting out the crockpot and whipping up chili.  But the same chili recipe sometimes gets old and even this chili lovin’ momma needs to switch it up.  My kiddos are decent with eating veggies but I try to pack them in wherever I can.  I added two cups finely minced spinach to this crockpot as well as 1/2 cup of pumpkin too.  Everyone loved it.  I was pleasantly surprised with the reaction- not that I thought they wouldn’t like it, but with the sneaky nutrients I packed in there, there were no complaints!  Here’s the recipe!  Ingredients:  1 lb lean ground turkey…

    Breakfast Quiche- Whole 30 Approved

    When I started Whole 30 I thought, how am I going to make it through on scrambled eggs and grilled chicken.  I need more variety in my life.  Around day 9 of eating mostly scrambled eggs, potatoes, and chicken I new I needed to spice things up or I was going to get bored.  And reach for the chips.  And I’m determined to get through these 30 days with no cheats.  Day 19 & going strong.   So I whipped up a yummy “breakfast” quiche, I say breakfast lightly because this has been my dinner twice this week, it’s so good.  Sweet potato crust, ground turkey, and plenty of veggies. …

    Whole 30 Nachos- The Game Changer

      Halfway through Whole 30 and all I can think about is nachos.  And husband made a pizza for the girls.  And Bon Jovi is playing in my head…  “Woahhhh! We’re halfway there.     Turkey Pumpkin Chili

    Sweet & Savory Turkey Pumpkin Chili I don’t know if I’m the only one who cooks like this, but I’ll start thinking up a recipe a week or so before I make it.  I literally let it simmer in my brain.  I think of things I want to add to it, how I want it to taste, what the texture and consistency should be.  Then I get hangry.  I start with the mouthwatering, drooling stuff.     Turkey Meatballs with Spaghetti Squash

    Everyone’s favorite.  Spaghetti and meatballs.  These kids would eat spaghetti for breakfast and dessert if I’d let them.
