Sweet Potato Breakfast Casserole
Some mornings call for breakfast casseroles. Today was one of those mornings. Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it. So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week. It turned out as good as I imagined. I hope you enjoy it! BLT Burger- Whole 30 Approved
Day 24 of Whole 30 and I still haven’t had bacon. Not that there’s anything against bacon. I just know how much of it I’ll eat. It’s shameful. We haven’t kept it in the house for a long time for that very reason. But with less than a week left, it’s time to indulge. And I wanted a burger. Something gourmet but not too fancy.
