I think we all know what’s important in life. Food that you can melt cheese on top of. Tonight, I wanted a dinner that was simple, flavorful, and didn’t require a lot of effort on my part. Fall is here. So much squash. We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash. Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night). Summer = BBQ. I always eat too much BBQ and feel miserable afterward- who’s with me? So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot! My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly. Easy. Simple. Delicious. An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack. This was one of those “come together” moments. I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born! Enjoy!
