    5 Ingredient Taco Stuffed Peppers

    No frills.  No B.S.  5 simple, clean ingredients, for a simple, clean meal.  If you want to add some extra spice to your taco meat, try my made-from-scratch taco seasoning below.  Ingredients:   4 medium bell peppers 1 c cooked quinoa 1 lbs lean ground turkey/chicken 1/2 c natural salsa 4 tbsp low fat Mexican shredded cheese Directions:  Slice peppers in half, remove seeds.  Bake in oven for 10 min at 350*.  While peppers are baking, brown ground turkey/chicken in skillet and add salsa.  Mix in 1 c cooked quinoa when turkey/salsa mixture is cooked.  Scoop mixture into peppers, overflowing.  Top with 1 tbsp cheese each.  Return to oven and bake…

      We all do it.  We have a BBQ coming up.  We swear we’re going to plan ahead, find some cute/healthy/fun recipe on Pinterest to make and an hour before we go it’s scramble mode to get it together!   Raiding the pantry and trying to throw something together.   Fortunately, if you’re like me and have a few things in your pantry and fridge already, this can be a breezy 5 minute recipe!   We use this as a salad, a side, a dip for tortilla chips, and to top turkey burgers, burritos, tacos, and really anything!   You can swap out several things but here’s a good base!…

    21 Day Fix Turkey Taco Cups

    The easiest of easy, healthy, and 21 Day Fix friendly dinners.  10 minutes skillet to table.  And always a hit with the whole family.  Only 6 ingredients total!  Enjoy and share!   Ingredients: 1 lb lean ground turkey  1 c of your favorite salsa (I used organic chipotle lime from Aldi) 1 can black beans 1 c frozen corn, thawed  Romaine lettuce leaves  Greek yogurt  Directions: In a skillet over medium-high heat, brown turkey with salsa.  Add beans and corn.  Mix well.  Serve in lettuce leaves and top with Greek yogurt.  Enjoy!   For 21 Day Fix: 1 red 1 yellow 1 green (3 leaves)  1/4 purple

    Chili-Lime Fish Tacos

    Some people live for Friday.  This lady lives for taco Tuesday.  Switching it up this week for some zesty fish tacos.  Easy peasy lime squeezie!  Enjoy!   Ingredients: 2 tilapia filets 1/2 tbsp chili powder 1 tsp cumin 1/2 tsp garlic powder  1/4 tsp sea salt Juice of 1/2 lime Other half of lime sliced  Directions:  Preheat oven to 400*.  Spray a foil-lined cookie sheet with olive oil.  Place thawed filets on sheet.  Squeeze lime juice over fish. Mix dry spices together.  Rub evenly onto fish. Place lime slices on top.  Bake 15-20 minutes until cooked through.  Serve in corn tortillas, topped with salsa,  and beans & rice on the…

    Crockpot Salsa Chicken Tostadas

    My favorite food group is salsa.  Hands down.  It’s my favorite condiment.  My favorite dip.  I eat it on eggs.  On top of a turkey burger.  And I use it as a marinade.  And taco Tuesday is one of my favorite days of the week because of salsa.   This is one of my favorite creations.  Easy.  Simplified.  Clean.  And crockpot friendly.  Perfect for a quick, healthy meal, and to satisfy those taco cravings!  Enjoy!     Enchilada Zucchini Boats

    When you’re trying to eat healthy but you only want tacos and enchiladas.  What do you do? You whip up a clean enchilada mix.  Shove it into some scraped out zucchini top it with a little cheese, bake it, and enjoy!
