    Fat Tuesday Jambalaya

    The old bartending days.  Down in Soulard.  Oooh I loved working Mardi Gras!  Tons of people.  Lots of tips.     BBQ Turkey Sliders

    Burgers.  Burger love.  Oh yeah…  One of my favorite cheat meals is a juicy burger.  So we opted for a healthier slider recipe for SuperBowl Sunday right here!  Ground turkey.  Organic BBQ sauce.  Topped with romaine and sliced avocado.  These are a kid favorite too!  Enjoy!   Ingredients:  1 lb lean ground turkey 3 tbsp organic honey BBQ sauce 1/4 cup ground flaxseed Sea salt and black pepper to taste Our Fav Toppings:  Cheese Avocado Dijon Mustard Romaine Lettuce Roma Tomatoes Directions:  In a large bowl, combine turkey, BBQ sauce, flaxseed, salt and pepper (I mix it with my hands!).  Shape into 8 small burger patties.  Indent each one with…

    Buffalo Chicken Bites (Healthier Version)

    Put out the buffalo chicken beacon and I’ll be the first one there!  And I feel like Super Bowl is one of the best days for all things buffalo chicken.  I wanted to come up with a recipe for buffalo chicken dip that was healthier and I got the idea to make them into bites, and believe me.  These turned out amazing!  I hope you enjoy them as much as we did!     Quinoa Stuffed Mini Peppers

    Easy. Simple. Delicious.   An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack.  This was one of those “come together” moments.  I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born!  Enjoy!  Ingredients:  6-8 mini peppers 2 c steamed chopped kale  1 c cooked quinoa 1/4 c (extra) diced peppers & red onion Feta cheese, optional  Directions: Cook quinoa according to package.  Steam kale until dark green.   Sauté extra diced peppers and onions in skillet with 2 tbsp water.  Slice mini peppers in half, top to bottom.…

    Buffalo Chicken Stuffed Sweet Potatoes

    Adam and Eve.  Romeo and Juliet.  Beyoncé and Jay-Z.  Peanut butter and jelly.  Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved.  Chicken.     Sesame Orange Chicken: Clean Version

    Chipotle Lime Fish with Citrus Rice

    I think we found a winner.  Competition prep time again and you know what that means?  Tilapia for days!  My husband is thrilled (insert sarcastic eye roll here). He’s not a seafood lover.  So, I have to be creative in order to get him to eat it!     Roasted Balsamic Veggies

    Balsamic vinegar is my jam.  I eat it on a lot of things.  I’m weird like that.  Salad. Chicken. Rice. Quinoa. Steak. Tilapia (see, weird).  So I had to do it on veggies.  Ok. One word. Delish.  These turned out great and made a perfect side for tonight’s roasted turkey breast.  Ingredients:  2 large zucchini, quartered 2 sweet potatoes, peeled & diced 2 carrots, peeled & diced  2 green peppers, chopped  1 onion, roughly chopped  1/4 c balsamic vinegar 2 tbsp EVOO  1 tbsp chopped rosemary  Sea salt & black pepper  Directions:  Chop all veggies.  Mix vinegar, oil, and spices together.  Toss together in a large bowl.   Bake at…

    Apple Walnut Salad with Honey Balsamic Vinaigrette

    I love a savory and sweet salad.  Especially when it’s a perfect complement to a big dinner.  This is my Thanksgiving dinner salad this year.  The crispness and crunch of the fresh-off-the-tree apples and the toasted walnuts make an excellent addition to this salad and it will pair nicely with roasted turkey breast, fresh bread, and white wine!     Superfood Maple Pumpkin Pancakes
