    Mediterranean Chicken Flatbread Pizza

    Buffalo Chicken Stuffed Sweet Potatoes

    Adam and Eve.  Romeo and Juliet.  Beyoncé and Jay-Z.  Peanut butter and jelly.  Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved.  Chicken.     Competition Prep: 15 Weeks Out

    I might be crazy.  I might be certifiably insane.  I’ve decided to tackle another competition.  Bikini competition #3.  March 26th.  St. Louis, MO. I may be in the throes of my last semester of nursing school.  That day will be my daughter’s 2nd birthday.  I will be prepping for finals.  Why not throw a competition in the mix too.  Well.  Here goes!     Gluten Free Chicken Noodle Soup

    When I was little, my mom made this homemade chicken noodle soup that was to die for.  Every time I was sick.  I could count on this yummy, creamy, delicious soup.  I couldn’t even tell you what she put in it (maybe I should ask her for the recipe) but it was delicious.  So with some change-in-the-season coughs coming around, a runny nosed toddler, a croupy three year old, and a feverish 6 year old, it was time for some crockpot chicken noodle soup today.   Every child needs that one soup memory.  That warm your soul, heal me when I’m sick, best mommy remedy.  This is that soup.  …

    Meal Prep Madness

    We are the epitome of busy.  We have three girls ages 8, 5, and 3.  My husband travels some for work.  I am a nurse (not currently practicing).  I run a business from my home helping people meet their fitness and nutritional goals.  We workout daily.  I grocery shop.  I run monthly accountability groups for my clients.  We prepare our meals fresh.  We have even been known to do fitness competitions.     Vegetarian Quinoa Black Bean Bites
