    Healthier Air Fryer Donuts

    You had me at “10 Minute Breakfast”! My kiddos will sleep in, lounge on the couch for an hour, and then IMMEDIATELY decide they are STARVING and need to eat RIGHT NOW!!! Quick, healthy breakfasts are totally our jam. However, they default to toaster waffles and would prefer pop-tarts or donuts where I’m more of a “made from scratch” sort of mom. Don’t get me wrong, we indulge every now and then, but if I can whip up a “healthier” version of a lot of things, I will. Donuts are one of our favs in this house too.     Saturday Salad!!!  Ok.  So I had this yesterday but it was so good I’m making it for lunch again today. And the dressing is just delicious and inspired from the Fixate Cookbook .  Super simple and absolutely delicious- and 21 Day Fix approved! For the Salad:   Ingredients:  1 medium chicken breast, cooked and chopped into 1″ pieces 1 tsp sunflower seeds 2 c broccoli and carrot slaw For the dressing:  Ingredients 1/3 c rice vinegar 1/3 c low sodium soy sauce 1 tsp organic wildflower honey (or pure maple syrup)  2 tbsp grated ginger 5 tbsp sesame oil Combine first four ingredients for the dressing in a bowl, whisk to…

    Chicken Stuffed Peppers- Two Ways

    As a parent you’re always trying to stuff something into food for your kids to eat it.  Disguising muffins as cupcakes but packing them with carrots and zucchini.  Adding flaxseed to oatmeal. Blending up extra veggies into a pizza sauce or even making cauliflower nuggets!  All things I’ve tried and have been successful with when it comes to what my kids eat!  Fortunately I have kids who love their veggies but we’re hard up to get them to eat proteins.  So shredded chicken stuffed into these peppers was a hit for us!  I love them with quinoa, my husband is a brown rice fan.  The girls ate both šŸ™‚  …

    We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend.  I mean, wow.  Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven.  We ate there twice.  Then we found Nashville Street Tacos… agghhh!  More deliciousness!     One of my favorite recipes and perfect for meatless Monday!  We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well.  The added protein from the black beans and the quinoa really helps to fill up from these delicious little bites of yumminess!  Plus, the kiddos love them, they’re quick, easy, and make for a great lunchbox treat too!   Ingredients:  3/4c uncooked quinoa (I use Trader Joe’s organic white quinoa)1 can low sodium black beans3/4c salsa4-5 mini sweet peppers or 1/2 c diced green peppers 3/4 c shredded low-fat cheese1/2c frozen corn3 eggs2tsp garlic powder1tsp cumin1/2c chopped fresh…
