Easy Loaded Potato Veggie Soup (Kid Approved)
One of the best compliments I think I’ve ever received came from my ten year old after she took a bite… “Mom! This is delicious! You should open a restaurant and call it ‘Mommy’s Soup Kitchen’ and serve soups just like this!” She doesn’t know I secretly would love to open a little cafe with hearty and healthy soups, gourmet sandwiches, and all kinds of coffee and desserts. But that dream exhausts me to the core thinking about it. And I’m much more content whipping up delicious little family friendly recipes with a healthy twist in the comfort of my own kitchen, and sharing them with friends on my blog.…

Thai Peanut Zoodle Bowl
I’ve been on a cooking kick lately. Not just the same old staples. But adding in a lot of variety and yummy, exotic flavors too. And all in less than 30 min. Ain’t nobody got time for being in the kitchen all day. Last week I was craving curry. So I made a yummy chicken curry chickpea cauliflower stew. It was heavenly and Anniston, my 5 year old, loved it too. Yesterday I meal prepped zucchini, toasted quinoa, and tomato egg muffins for breakfasts for the week. They have not disappointed. Today spicy Thai peanut noodle bowl. Only I didn’t have noodles. But I did have zucchini. Today’s zoodle bowl…

Perfect Instant Pot Beef Stew
Owning and cooking with an Instant Pot is a lot like starting a fitness journey…. You purchase the equipment you need. More often than not you let it sit in the box, in the back of the closet/pantry, staring at you, judging you, silently asking, “When are you going to do this, girl?!” Then one day you decide it’s time. So you drag it out, spend more time perusing the internet than you should figuring out “how” to start, and just decide to tear the bandaid off. You throw some things together, you break a sweat in the process, you take caution to avoid injury, and when it’s all said…

Sloppy Joe Stuffed Sweet Potatoes
There comes a moment when I’m putting together a recipe when I pause and close my eyes and imagine how it’s going to taste when it’s complete. Not too often do they come out EXACTLY as my tastebuds had envisioned but this was one of those recipes that did. If I could pick a food to live on for the rest of my life, sweet potatoes might just be it. Punctured with a fork, wrapped in foil, and baked at 400* for 45 minutes and I’m in potato heaven. I love carbs, but I digress. This turkey sloppy joe meat could be served on whole grain rolls as a sandwich,…

Easy Chicken Burrito Bowls
We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend. I mean, wow. Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven. We ate there twice. Then we found Nashville Street Tacos… agghhh! More deliciousness! I couldn’t get enough southwest style fare (yeah, in Nashville, I know). So when we got home I decided I was going to throw in a few similar style southwestern flair dinners for this weeks menu. Last night we did a deconstructed chicken burrito. It was heavenly. One happy husband, and three happy kids. And I had to stop myself from going…

Beef and Butternut Squash Stew
Ohhhhhhhh the aroma that comes from the kitchen when I make this stew is enough to make the neighbors mouths water! And any meal that’s out of the “norm” that my kids try and actually eat a few bites of is a win. The husband loved it and I knew he would. Meat. Everything in one bowl. No rabbit food. Win! This is hands down one of my favorite 21 Day Fix & Fix Extreme recipes! Ingredients; 1 lb lean (trimmed) beef stew meat 1 medium butternut squash (chopped into 1/2-1″ cubes) 1 cup low sodium beef broth (can use water and 1 tsp low sodium beef bouillon)…

Southwest Stuffed Sweet Potatoes (vegetarian)
Oh how I love Meatless Monday dinners! For our family it can be a challenge to come up with a healthy, flavorful meat free meal that my husband (a meat and potatoes guy) will eat and enjoy! This was a huge hit the first time I made it, so today after starting another round of 21 Day Fix Extreme I wanted to kick off with a Fix friendly dinner that still felt like a “cheat meal”! These loaded sweet potatoes are excellent for keeping that full feeling afterward without the harsh effects on your waistline! Ingredients: 4 small/medium sweet potatoes 1/2 cup black beans, cooked 1/2 cup…

Vegetarian Quinoa Black Bean Bites
One of my favorite recipes and perfect for meatless Monday! We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well. The added protein from the black beans and the quinoa really helps to fill up from these delicious little bites of yumminess! Plus, the kiddos love them, they’re quick, easy, and make for a great lunchbox treat too! Ingredients: 3/4c uncooked quinoa (I use Trader Joe’s organic white quinoa)1 can low sodium black beans3/4c salsa4-5 mini sweet peppers or 1/2 c diced green peppers 3/4 c shredded low-fat cheese1/2c frozen corn3 eggs2tsp garlic powder1tsp cumin1/2c chopped fresh…
