Firecracker Pasta Salad
Summer. Holiday weekend. BBQ’s. Soooooo much food! I love pasta salad but always eat wayyyyy too much and feel like a brick is in my stomach after. I whipped up this healthier alternative with a little kick, perfect for those holiday BBQ’s without the guilt! Enjoy! Ingredients: 1 box veggie pasta, cooked and cooled 3-4 Roma tomatoes, chopped 1 jalapeño, seeded & minced 3/4 c black beans, rinsed & drained 3/4 c sweet corn 1/2-3/4 c Bolthouse farms Salsa Ramch dressing or 1/2 c salsa mixed with 1/3 c plain Greek yogurt Directions: Mix all ingredients in a large bowl. By the time 4th of July rolls around, we’re ready for some yummy treats. Summer produce is in abundance and we always have too many strawberries and blueberries in our fridge.
