    BBQ Pulled Chicken Stuffed Sweet Potatoes

    Summer = BBQ.  I always eat too much BBQ and feel miserable afterward- who’s with me?  So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot!   My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly.  Sitting on the patio, a nice cold beverage in hand, a yummy side salad, and this makes the perfect summer meal!     My favorite food group is salsa.  Hands down.  It’s my favorite condiment.  My favorite dip.  I eat it on eggs.  On top of a turkey burger.  And I use it as a marinade.  And taco Tuesday is one of my favorite days of the week because of salsa.   This is one of my favorite creations.  Easy.  Simplified.  Clean.  And crockpot friendly.  Perfect for a quick, healthy meal, and to satisfy those taco cravings!  Enjoy!     Enchilada Zucchini Boats

    When you’re trying to eat healthy but you only want tacos and enchiladas.  What do you do? You whip up a clean enchilada mix.  Shove it into some scraped out zucchini top it with a little cheese, bake it, and enjoy!     Lentil Stew (Crockpot)

    Black Bean Lentil Stew

    On Sunday’s we crockpot.  Football, crisp autumn air, crunching in the leaves, wearing scarves, eating soups and stews out of cold weather bowls and getting that warm, fuzzy feeling.   This meal was created by total happenstance.  I wanted a crockpot dinner but didn’t have a plan so I worked with what I had.  And it worked.  My husbands words:  “Oh this is good.     Creamy Chicken and Rice Soup (Crockpot)
