    This is one of those dinners… that satisfies every #TacoTuesday need. There’s something about Taco Tuesday. Every Monday night I get a little excited. Like it’s Christmas. Like the Taco Fairy is going to pay a visit to my house and sprinkle my taste buds with heavenly deliciousness of savory and cheesy and spicy goodness!     Chunky Chicken Tortilla Stew (Crockpot & Instant Pot)

    You can’t spell Taco Tuesday without “YES” or “EAT”… And when my picky kids EAT chicken chili that’s loaded with veggies, it makes this momma say, “YES!” This can be done in the crockpot or in the Instant Pot- depending on what you have time for. Personally I fixed this in the slow cooker on a lazy Sunday and the house smelled amazing. I’ve included the Instant Pot directions below too.     This soup came to fruition after looking through my fridge/pantry, deciding I needed to go grocery shopping, but with a barfy kid, feeling quarantined to the house, I decided I needed to use up what was left of my previous week’s meal prep/grocery trip first.     Buffalo Chicken Lettuce Wrap Tacos

    Ingredients: 4 boneless, skinless chicken breasts, thawed 1/2 c Buffalo Wing Sauce 1/4 c Greek yogurt ranch dressing  Romaine lettuce leaves  Shredded low fat cheese Additional Ranch for topping Directions: In a crockpot, combine chicken, wing sauce, and Greek yogurt ranch. Cook on low 4-6 hours.  Remove chicken and shred.  Place mixture into lettuce leaves.  Top with shredded cheese and additional ranch if desired. Enjoy!

    Perfect Autumn Secret Ingredient Chili

    As soon as those leaves start falling, I’m busting out the crockpot and whipping up chili.  But the same chili recipe sometimes gets old and even this chili lovin’ momma needs to switch it up.  My kiddos are decent with eating veggies but I try to pack them in wherever I can.  I added two cups finely minced spinach to this crockpot as well as 1/2 cup of pumpkin too.  Everyone loved it.  I was pleasantly surprised with the reaction- not that I thought they wouldn’t like it, but with the sneaky nutrients I packed in there, there were no complaints!  Here’s the recipe!  Ingredients:  1 lb lean ground turkey…

    Oh sweet baby lord in heaven… I wish  the internet had smell-o-vision… this might just be at the top of things I’ve whipped up that I could eat every day and never get tired of it.     Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening!
