Pumpkin Vanilla Muffins (clean eating)
Hello September. Enter : pumpkin spice everything. Pumpkin spice lattes, pumpkin bread, pumpkin cookies, pumpkin cereal, pumpkin spice toilet paper, pumpkin spice deodorant. Seriously. Everything. Fortunately I don’t let our family fall into the trap of artificial pumpkin flavors. We like the real deal. So onto the bandwagon I go. Capitalizing on the everything pumpkin. But we’re doing it the clean eating, natural way so I’ll be whipping up a new pumpkin recipe each week using what I have in my kitchen! This week: Pumpkin Vanilla Mini Muffins for the kiddos (and grown ups!). Ingredients: 1 c whole wheat flour 1 c quick cook oats 1 tsp cinnamon 1/2…

Turkey Meatballs with Spaghetti Squash
Everyone’s favorite. Spaghetti and meatballs. These kids would eat spaghetti for breakfast and dessert if I’d let them. So what do moms do? We squeeze in veggies wherever we can! We switch it up, we try new things and we pray for success! Tonight we did a little twist on an old favorite and everyone cleaned their plates! Even daddy! In our house when everyone cleans their plates, we have dessert! And tonight, it won’t be spaghetti! Turkey Meatballs Ingredients: 1 lb lean ground turkey 1/3c ground flaxseed meal 1/4 c almond milk 3 tbsp diced onion 2 cloves minced garlic 1/4 c chopped parsley or spinach…

Pumpkin Spice Coffee Creamer (clean)
Because once September hits, the pumpkin spice is flowing like the Budweiser beers during Cardinals playoffs (another reason why I love this time of year!). So contrary to my husband who wanted to stick to the artificial stuff, I wanted to recreate that PSL flavor without the added sugar, artificial flavors, or food dyes. Ingredients: 1 c vanilla unsweetened almond milk 1 tbsp pumpkin purĆ©e 1/2 tsp cinnamon 1/4 tsp nutmeg 1 tbsp pure maple syrup Directions Combine all ingredients in a small saucepan over low-medium heat whisking lightly until purĆ©e has dissolved and milk begins to steam. Remove from heat and pour into a mason jar or…

Easy Egg Muffin Cups
Breakfast is a disaster at our house. One kid off to first grade. One momma off to nursing school. One daddy off to work, and sometimes two little kids off to daycare when Grandma’s not here. I don’t have time to make 5 different breakfasts. I don’t have time to make my own breakfast some days but it’s the most important meal of the day so I don’t allow myself to skip it. This is where meal planning comes into play. Because we try to eat clean, natural foods and avoid artificial ingredients at every opportunity, a fresh, healthy breakfast is important to us. So a little time this morning…

Dark Chocolate Shakeology Granola Bars
It’s 10:00 pm. Do you know where your husband is? Mine’s in the pantry. Eating something with peanut butter. If it’s not him it’s me. Usually I need chocolate too. So I needed a solution. Something that would make for a good “late night bite” without feeling like I’m ruining the days nutrition. Sorry Ben and Jerry, but you guys don’t play fair. Last night I whipped these up and stick them in the fridge. My girls loved them for breakfast and I’m snacking on one as we speak. Hopefully I’ll have some left when my husband gets home from his trip tomorrow! Dark Chocolate Shakeo Granola…

Moroccan Curry Chicken and Lentil Stew
When the cat’s away the mouse will… eat curry? I have a picky husband. As sad as I am to see him go out of town for business, I really get to spread my wings when it comes to cooking. So I whipped up this yummy curry chicken and lentil stew and by golly it was a hit with the kids too! The baby literally licked her bowl clean! I think this would work well in the crock pot too. (See variation below). Ingredients: 3-4 medium chicken breasts, thawed & diced into 1″ pieces 3-4 celery ribs, chopped 2tbsp chopped yellow onion 2 garlic cloves, finely diced 1 can chickpeas,…

Chicken Stuffed Peppers- Two Ways
As a parent you’re always trying to stuff something into food for your kids to eat it. Disguising muffins as cupcakes but packing them with carrots and zucchini. Adding flaxseed to oatmeal. Blending up extra veggies into a pizza sauce or even making cauliflower nuggets! All things I’ve tried and have been successful with when it comes to what my kids eat! Fortunately I have kids who love their veggies but we’re hard up to get them to eat proteins. So shredded chicken stuffed into these peppers was a hit for us! I love them with quinoa, my husband is a brown rice fan. The girls ate both š …

Vanilla Protein Granola (with Shakeology)
Saturday mornings are for lounging, for coffee, and for listening to our kids run around and wrestle and giggle. We absolutely cherish these moments. Moments when we can sit peacefully and sip coffee out of old mugs, each one with a story to tell. Mine was a gift from coworkers years ago, a time in my life where my job was a big part of my identity, where I lived to work. I loved those that I worked with and the passion in their eyes truly made my “job” a place I enjoyed to go each day. My husbands mug was a gift from his 10 year West Point reunion,…

Chicken and Veggie Tostadas
Taco Tuesday! I wanted to switch it up tonight and try something different. I had to take a CPR class this evening so I knew a crock-pot recipe was a must. With nursing school starting up in just a few weeks, I have a strong feeling that the crock-pot will be getting some good use again. So after coming back from a 6 day vacation last night and not being able to get to the grocery store yet, I had to work with what was left in the fridge. I had some zucchini, some peppers, and a bag of frozen chicken. Aside from that I had some corn tortillas left…
