    Hammer and Chisel: 60 Day Results

    Chocolate Covered Strawberry Shakeology

    Fat Tuesday Jambalaya

    The old bartending days.  Down in Soulard.  Oooh I loved working Mardi Gras!  Tons of people.  Lots of tips. Delicious food.  You could count on me scarfing down several bowls of jambalaya during a 12 hour shift!   So tonight being Fat Tuesday, I wanted to recreate the Mardi Gras taste of jambalaya I remembered but with a little bit healthier kick.  We used our jalapeño cheddar elk sausage but you can use a ground turkey, a lean ground sausage, or chicken and it would be just as yummy.  I hope you enjoy!   Laissez les bon temps roulez!  Ingredients:  1 lbs lean sausage or turkey (we used elk) 3…

    BBQ Turkey Sliders

    Burgers.  Burger love.  Oh yeah…  One of my favorite cheat meals is a juicy burger.  So we opted for a healthier slider recipe for SuperBowl Sunday right here!  Ground turkey.  Organic BBQ sauce.  Topped with romaine and sliced avocado.  These are a kid favorite too!  Enjoy!   Ingredients:  1 lb lean ground turkey 3 tbsp organic honey BBQ sauce 1/4 cup ground flaxseed Sea salt and black pepper to taste Our Fav Toppings:  Cheese Avocado Dijon Mustard Romaine Lettuce Roma Tomatoes Directions:  In a large bowl, combine turkey, BBQ sauce, flaxseed, salt and pepper (I mix it with my hands!).  Shape into 8 small burger patties.  Indent each one with…

    Seven Layer Taco Dip (Clean Version)

    I put my hand upon my chip.  When I dip you dip we dip!   Happy taco Tuesday!  One of my favorite things in the entire world is tacos!  And dips.  So it only made sense to combine the two!  This is the vegetarian version but you can add ground beef or turkey and layer it on the bottom for some added protein!  A little fresh cilantro on top and this is a healthy appetizer or a one dish dinner!     Quinoa Stuffed Mini Peppers

    Easy. Simple. Delicious.   An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack.  This was one of those “come together” moments.  I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born!  Enjoy!  Ingredients:  6-8 mini peppers 2 c steamed chopped kale  1 c cooked quinoa 1/4 c (extra) diced peppers & red onion Feta cheese, optional  Directions: Cook quinoa according to package.  Steam kale until dark green.   Sauté extra diced peppers and onions in skillet with 2 tbsp water.  Slice mini peppers in half, top to bottom.…

    Sesame Orange Chicken: Clean Version

    It’s Friday night.  I want take out.  The old me would’ve called out for Chinese delivery.  I still have dreams of General Tso’s chicken.  Don’t get me wrong, I’m all for indulging and “treat” meals, but the sodium that’s loaded into Chinese takeout is enough to make my rings too tight for a week.  So instead of giving into my cravings, I had to come up with something that I could feel good about eating, feeding to the kids, and that would leave me full and not digging in the fridge for seconds an hour after eating it.  Which by the way, why is it when you eat Chinese takeout…

    Chipotle Lime Fish with Citrus Rice

    I think we found a winner.  Competition prep time again and you know what that means?  Tilapia for days!  My husband is thrilled (insert sarcastic eye roll here). He’s not a seafood lover.  So, I have to be creative in order to get him to eat it! When we were in Florida the first week of January, they were sampling some chipotle rubbed salmon at the fresh market.  It was delicious.  But he’s not a salmon fan.  So I whipped up a little chipotle like marinade and soaked the tilapia in it for a bit, and it turned out excellent!  Paired with my own little citrus rice creation and some…

    Roasted Balsamic Veggies

    Balsamic vinegar is my jam.  I eat it on a lot of things.  I’m weird like that.  Salad. Chicken. Rice. Quinoa. Steak. Tilapia (see, weird).  So I had to do it on veggies.  Ok. One word. Delish.  These turned out great and made a perfect side for tonight’s roasted turkey breast.  Ingredients:  2 large zucchini, quartered 2 sweet potatoes, peeled & diced 2 carrots, peeled & diced  2 green peppers, chopped  1 onion, roughly chopped  1/4 c balsamic vinegar 2 tbsp EVOO  1 tbsp chopped rosemary  Sea salt & black pepper  Directions:  Chop all veggies.  Mix vinegar, oil, and spices together.  Toss together in a large bowl.   Bake at…

    Competition Prep: 15 Weeks Out

    I might be crazy.  I might be certifiably insane.  I’ve decided to tackle another competition.  Bikini competition #3.  March 26th.  St. Louis, MO. I may be in the throes of my last semester of nursing school.  That day will be my daughter’s 2nd birthday.  I will be prepping for finals.  Why not throw a competition in the mix too.  Well.  Here goes!
