Ohhhhhhhh do we love fajitas in our house! I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas. These are super simple, clean, and low carb too! And always leave us full and satisfied! One of my favorite recipes and perfect for meatless Monday! We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well. The added protein from the black beans and the quinoa really helps to fill up from these delicious little bites of yumminess! In my house, we love peanut butter. Every week, on the grocery list. Peanut Butter. Spoonfuls on spoonfuls, PBJ’s, protein bites, treats, snacks, ants on a log, etc. You know it. Vegetarian Couscous Salad This is a favorite of mine. A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.
