    Unicorn Bark!

      It’s truly magical.   That mom moment when you whip up a healthier snack for your kids and they actually like it.  And eat it.  Maybe it’s because I used the word unicorn.  It seems that if you put the word unicorn in front of anything it creates a lot of hype.  Or if you add just enough color and sprinkles.   “Moommmmm… I don’t want broccoli for dinner.” “But it’s unicorn broccoli!” “YUUMMMMM!!!     Best Year Yet 6 Week Bootcamp – Starts March 13th

      Well. 2017 started out strong. Nutrition was on point. Workout routine was stellar. Then life happened. Real world crept back in and even though I started strong, I’ve been pretty weak as of lately. Easily tempted.       One thing about meal prepping is having easy sides to pick and choose from.  Those tend to be more time consuming than preparing an actual meal at times.  One of my favorite things to prep on a Sunday is a pan of roasted veggies that will carry us through for a couple meals.  I do this a couple times each week, and they always turn out amazing. Ingredients: 3 small/medium sweet potatoes, peeled and diced 2 large zucchini, sliced and quartered 1-2  heads of broccoli*, rough chopped 1 tbsp Extra Virgin Olive Oil Himalayan Sea Salt Cracked pepper Various herbs/seasonings (I use oregano, parsley, basil, typically) Directions:  Toss veggies/potatoes…

    I’m just a girl, standing in front of a stove, asking for dinner to make itself. Fortunately this wasn’t quite as difficult and time consuming as I imagined in my mind it would be. And keeping it simple and CROCKPOT friendly made it that much easier on our busy schedules.     Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening!
