    Spring into Summer- 30 Day Health & Fitness Bootcamp

    Breakfast Quiche- Whole 30 Approved

    When I started Whole 30 I thought, how am I going to make it through on scrambled eggs and grilled chicken.  I need more variety in my life.  Around day 9 of eating mostly scrambled eggs, potatoes, and chicken I new I needed to spice things up or I was going to get bored.  And reach for the chips.  And I’m determined to get through these 30 days with no cheats.  Day 19 & going strong.   So I whipped up a yummy “breakfast” quiche, I say breakfast lightly because this has been my dinner twice this week, it’s so good.  Sweet potato crust, ground turkey, and plenty of veggies. …

    Beef Stew with Sweet Potatoes- Whole 30 Friendly

    I’m just a girl, standing in front of a stove, asking for dinner to make itself. Fortunately this wasn’t quite as difficult and time consuming as I imagined in my mind it would be. And keeping it simple and CROCKPOT friendly made it that much easier on our busy schedules.     Butternut Squash Chicken Stew (Crockpot)

    Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening!     Taco Stuffed Spaghetti Squash
