    By the time 4th of July rolls around, we’re ready for some yummy treats.     Ohhhhhhhh do we love fajitas in our house!  I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas.  These are super simple, clean, and low carb too!  And always leave us full and satisfied! Add caption Ingredients:  3 large chicken breasts, thawed 1 large green pepper, sliced 5-6 sweet mini peppers, sliced 1/4 onion, sliced (optional)  1 tbsp chili powder 1 tbsp cumin 1/2 tsp sea salt 1/4 tsp chipotle chili seasoning Juice of 1 lime Romaine lettuce leaves  Lowfat shredded cheese or Plain lowfat Greek yogurt Salsa  Cooked brown rice (optional)  Instructions:   Thaw chicken and place in bottom of sprayed crock…

    Vegetarian Couscous Salad This is a favorite of mine.  A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.  Stir in, cover and remove from heat.  Let stand 5 minutes.  Spoon into large bowl, add…

    Chocolate Shakeology Protein Bites

    Chocolate Shakeology Protein Bites Because sometimes when you have a snack attack, it has to be a cookie!  And when it does, this is a a perfect, healthy, alternative to a sugar-packed, ball of unhealthiness!  Ingredients: 1 c quick cook oats 1/2 c all natural peanut butter 1/4 c wildflower honey 1 scoop/packet chocolate Shakeology Directions:  Mix all ingredients until combined well in a bowl.  Roll into 1″ balls.  Refrigerate for 15 minutes.  Enjoy!  *You can also add 1/4 c flaxseed meal but may need to add a little more honey!
