Sloppy Joe Stuffed Sweet Potatoes
There comes a moment when I’m putting together a recipe when I pause and close my eyes and imagine how it’s going to taste when it’s complete. Not too often do they come out EXACTLY as my tastebuds had envisioned but this was one of those recipes that did. If I could pick a food to live on for the rest of my life, sweet potatoes might just be it. Punctured with a fork, wrapped in foil, and baked at 400* for 45 minutes and I’m in potato heaven. I love carbs, but I digress. This turkey sloppy joe meat could be served on whole grain rolls as a sandwich,…

Mommy Guilt
Mommy Guilt. We all have it… It starts when they’re teeny tiny, that first week old and thinking “Man, I just want to take a shower without this tiny earthling attached to me around the clock!” And as soon as I jump in the shower it never fails, the baby cries and the guilt sets in! Now that they’re a little older the guilt is less…guilty… I guess. But I still get that heartache when I have to leave them for an extended period of time. I was thinking that last night as I was packing my bags for our 4 day getaway this weekend to Nashville, that this will…

21 Day Fix Extreme is Under Way!
As of yesterday I officially started 21 Day Fix Extreme! I have made some really crummy decisions with food last week and am paying for it now. I gained 6 lbs in one week. Granted, our competition was the 27th and we were really lean, but the amount of cake, ice cream, BBQ, snacks, cheat meals, and all around junk I ate wasn’t pretty. So I did it, I’m done with it, and I’m starting fresh this week. The last time I did 21 Day Fix extreme was in prep for my first bikini competition and I got some pretty incredible results. (See below) So I’m ready for another 21…

Southwest Stuffed Sweet Potatoes (vegetarian)
Oh how I love Meatless Monday dinners! For our family it can be a challenge to come up with a healthy, flavorful meat free meal that my husband (a meat and potatoes guy) will eat and enjoy! This was a huge hit the first time I made it, so today after starting another round of 21 Day Fix Extreme I wanted to kick off with a Fix friendly dinner that still felt like a “cheat meal”! These loaded sweet potatoes are excellent for keeping that full feeling afterward without the harsh effects on your waistline! Ingredients: 4 small/medium sweet potatoes 1/2 cup black beans, cooked 1/2 cup…

Red, White, and Blueberry Muffins
By the time 4th of July rolls around, we’re ready for some yummy treats. Summer produce is in abundance and we always have too many strawberries and blueberries in our fridge. And I never let fresh produce go to waste. We can only drink so many strawberry and blueberry smoothies so it was time for a healthy snack recipe and I think the girls and I created a good one. A healthy, clean-eating, sugar-free, delicious muffin that could be mistaken for a cupcake if you ask me! Ingredients: Dry Ingredients: 3/4 cup quick oats 1 cup whole wheat flour 1 tsp baking soda 1 tsp baking powder 1/4 tsp…

Vegetarian Quinoa Black Bean Bites
One of my favorite recipes and perfect for meatless Monday! We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well. The added protein from the black beans and the quinoa really helps to fill up from these delicious little bites of yumminess! Plus, the kiddos love them, they’re quick, easy, and make for a great lunchbox treat too! Ingredients: 3/4c uncooked quinoa (I use Trader Joe’s organic white quinoa)1 can low sodium black beans3/4c salsa4-5 mini sweet peppers or 1/2 c diced green peppers 3/4 c shredded low-fat cheese1/2c frozen corn3 eggs2tsp garlic powder1tsp cumin1/2c chopped fresh…

The Why Behind Everything I Do
As I sit here looking over my planner for the next few weeks, trying to organize my life and create a sense of normalcy among the chaos that is my current life, I have to pause, breathe, and be thankful for what has brought me to the chaos that I have today. When you’re sitting in the delivery room, waiting for them to hand you your very first, teensy weensy, wrinkly, freshly bathed and swaddled little peanut, what they don’t tell you is that not only is this little person now outside your body but now, so is your heart. Here you are, Mrs. Roberts, and you will now be wearing your…

Clean Eating Shakeology Granola Bars
In my house, we love peanut butter. Every week, on the grocery list. Peanut Butter. Spoonfuls on spoonfuls, PBJ’s, protein bites, treats, snacks, ants on a log, etc. You know it. We also love chocolate. When we can combine the two, it’s heaven. These healthy, guilt-free snacks are perfect for that afternoon craving, that post-workout protein need, or that late night sweet tooth that won’t quit. Dunked into a glass of vanilla unsweetened almond milk and I’m done for. I hope you love these as much as we do! Ingredients: 2 c quick oats 2 scoops chocolate Shakeology 1/4c ground flaxseed meal 1 tsp cinnamon 1/4 tsp sea salt…
