    Asian Chopped Chicken Salad

    Saturday Salad!!!  Ok.  So I had this yesterday but it was so good I’m making it for lunch again today. And the dressing is just delicious and inspired from the Fixate Cookbook .  Super simple and absolutely delicious- and 21 Day Fix approved!     Moroccan Curry Chicken and Lentil Stew

    Coach Summit 2015- Nashville

    It’s been a few weeks but my first experience at Coach Summit happened over the weekend of July 16th and I’m still on a Summit “high”!  If you’re not familiar with what Summit is, it’s the annual training trip from Beachbody where this year 25,000 coaches out of 330,000 came together.  There is recognition, celebration, training, and workouts with celebrity trainers. I got to fist bump Sagi (the Body Beast guy) after my workout.  I kind of felt like a big deal.  I showed up to my workout with Autumn Calabrese (creator of 21 Day Fix/Extreme and Fixate) wearing the same thing she was wearing.  She should have called me…

    Chicken Stuffed Peppers- Two Ways

    As a parent you’re always trying to stuff something into food for your kids to eat it.  Disguising muffins as cupcakes but packing them with carrots and zucchini.  Adding flaxseed to oatmeal. Blending up extra veggies into a pizza sauce or even making cauliflower nuggets!  All things I’ve tried and have been successful with when it comes to what my kids eat!  Fortunately I have kids who love their veggies but we’re hard up to get them to eat proteins.  So shredded chicken stuffed into these peppers was a hit for us!  I love them with quinoa, my husband is a brown rice fan.  The girls ate both 🙂  …

    Vanilla Protein Granola (with Shakeology)

    Saturday mornings are for lounging, for coffee, and for listening to our kids run around and wrestle and giggle.  We absolutely cherish these moments.     Chicken and Veggie Tostadas

    Taco Tuesday!  I wanted to switch it up tonight and try something different.     21 Day Fix Extreme Results!!!

    I just wrapped my second ever round of 21 Day Fix Extreme on Monday and wow!  I loved this program when I used it for competition prep back in February because it gave me shredded results and I loved it again now for that very same reason.   The pic on the left is 8 days after my last competition.  That’s right.  I was that girl who binge ate for a week after my show, was bloated, felt like crap, and what did I have to show for it except the pics on the left.     Guilt Free Chocolate Shakeology Pie

    I’m a sucker for pie.  Fruit pies, yum.  Creme pies, yum.  Sugar laden, loaded with butter, topped with ice cream… yum?  Yeah, sometimes you just need pie.  So, as a clean eating freak, I was on a mission to create a pie that I can eat and not feel bad about or have to wear sweatpants while eating.  Enter Guilt Free Chocolate Shakeology Pie!  Heaven!!!  Each serving has approximately 240 calories and 12 grams of protein.  This is a great post-workout treat too (because who doesn’t like to have pie after a workout!) and can be 21 Day Fix friendly too!  And I can secretly do my villain laugh while…

    Beachbody Performance Line Review

    I’m kind of a supplement snob.  Ask my husband.  I’m picky.  Too much jittery, not enough protein, it’s not isolate.  It tastes like a car tire.  It’s packed with sucralose.  It makes me need to use the bathroom.  Frequently.  Let’s be honest.  Nobody wants something so “stimulating” that it stimulates you to the bathroom all day.  So I was super pumped last week at Summit when Beachbody released their performance line!  I tend to watch my sugar intake and am not a fan of artificial sweeteners and frankly, if it’s too sweet, I don’t like it.  These are all natural, no artificial sweeteners, and use Stevia, a natural plant leaf…

    Zucchini Chips (Fixate Cookbook)

    These turned out to be just perfect!  And when you can get away with serving your kids “chips” for dinner, it’s a win-win!  Keep an eye on these while you’re cooking, if they’re cut too thin they can crisp up quickly.  I tried turning the temp up a bit to cook them quicker and they did ok, but cooking low and slow is ideal. Zucchini Chips Ingredients:  2 large zucchini, sliced thinly with mandolin slicer or paring knife (be careful!) 3-4 tsp EVOO Sea salt to taste Instructions:  Preheat oven to 225*.  Slice zucchini thin.  Pat dry with paper towel.  Drizzle lightly with oil,  Bake on parchment lined cookie sheets…
