    Sweet Potato Breakfast Casserole

    Some mornings call for breakfast casseroles.  Today was one of those mornings.  Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.  So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.   It turned out as good as I imagined.     Superfood Chicken Chili (crockpot)

    This soup came to fruition after looking through my fridge/pantry, deciding I needed to go grocery shopping, but with a barfy kid, feeling quarantined to the house, I decided I needed to use up what was left of my previous week’s meal prep/grocery trip first.     Easy Egg All in One Breakfast Muffins

    I’m embarking on a new program next week.  To be honest, I’m pretty excited.  A fitness and nutrition adventure that for the next 3 months (ish) is going to shape my mindset (and my butt, arms, and abs) and the way I think about nutrition into some pretty amazing results.     Garlic Butter Shrimp “Linguini” With Zoodles

    That day-after-Christmas food hangover… you know the one.  Too much cheese.  Too many crackers.  Pie up to your eyeballs.  Potato casserole. Spiked egg nog. All of the goodies. Back on track today.  With a fridge full of leftovers. I opened my fridge, overwhelmed with what was left, and just wanted something light & simple.  So I grabbed the leftover shrimp from the shrimp cocktail.  Some veggies from the veggie tray.  The zucchini that never got roasted as planned, and some Parmesan cheese from the au gratin potatoes.  5 minutes later- a light, healthy lunch happened.  And it happened to be delicious!     Cashew Chicken + Zoodles (Whole 30/Low Carb)

    ❤️🌮🥘 EASY DINNER RECIPE!!! 🥘🌮❤️ What do you do when you’re not feeling so hot and it’s  Taco Tuesday ? You turn your weekly taco night into soup!     Broccoli Cheddar Stuffed Sweet Potatoes

    I think we all know what’s important in life. Food that you can melt cheese on top of. Tonight, I wanted a dinner that was simple, flavorful, and didn’t require a lot of effort on my part.  Granted this took almost an hour to cook, prep was about 10 minutes tops.  And the melty cheese part, well that’s a bonus.     Buffalo Chicken Lettuce Wrap Tacos

    Ingredients: 4 boneless, skinless chicken breasts, thawed 1/2 c Buffalo Wing Sauce 1/4 c Greek yogurt ranch dressing  Romaine lettuce leaves  Shredded low fat cheese Additional Ranch for topping Directions: In a crockpot, combine chicken, wing sauce, and Greek yogurt ranch. Cook on low 4-6 hours.  Remove chicken and shred.  Place mixture into lettuce leaves.  Top with shredded cheese and additional ranch if desired. Enjoy!

    Perfect Autumn Secret Ingredient Chili

    As soon as those leaves start falling, I’m busting out the crockpot and whipping up chili.  But the same chili recipe sometimes gets old and even this chili lovin’ momma needs to switch it up.  My kiddos are decent with eating veggies but I try to pack them in wherever I can.  I added two cups finely minced spinach to this crockpot as well as 1/2 cup of pumpkin too.  Everyone loved it.  I was pleasantly surprised with the reaction- not that I thought they wouldn’t like it, but with the sneaky nutrients I packed in there, there were no complaints!  Here’s the recipe!  Ingredients:  1 lb lean ground turkey…

    Italian Chicken Stuffed Spaghetti Squash- Low Carb

    Oh sweet baby lord in heaven… I wish  the internet had smell-o-vision… this might just be at the top of things I’ve whipped up that I could eat every day and never get tired of it.
