Creamy Chicken Enchiladas (Healthier version)
Some nights you just need a comfort food, soul feeding, delicious pan of creamy enchiladas. It’s been years since I made a pan of enchiladas and to say we were due was an understatement. As we embark on a 3 week- super healthy fitness & nutrition regimen in prep for our Punta Cana vacation on April 23rd, this was a healthier “last hoorah” as a pre-gift to ourselves for committing to hard work for 3 weeks. Keep in mind, when you lead a healthy lifestyle- you should indulge. You should have treat meals. And you shouldn’t restrict yourself- that’s no fun. Neither is dieting. Eat to live. Not the…

Cauliflower Rice Stir Fry – Whole 30 Approved
Me on Whole 30: What else can I cook that’s going to be amazing! THIS! This was my first time with cauliflower rice. I didn’t know what to expect. I assumed it wouldn’t taste as amazing as it did and I’m happy to be proven wrong! And when my husband tries this and says- I’d eat that- I know it’s a success! Let me know what you think! Ingredients: 1 head of cauliflower, riced (aka, grate the florets over a grater that you would use for a block of cheese) 1 c chopped carrots 1 medium red/yellow pepper or 4-5 mini peppers, diced 3 tbsp diced onion 1/2-3/4 c chopped…

BLT Burger- Whole 30 Approved
Day 24 of Whole 30 and I still haven’t had bacon. Not that there’s anything against bacon. I just know how much of it I’ll eat. It’s shameful. We haven’t kept it in the house for a long time for that very reason. But with less than a week left, it’s time to indulge. And I wanted a burger. Something gourmet but not too fancy. I’m still in workout clothes anyway so you know, just fancy enough. So we grilled some amazing chicken burgers seasoned with rosemary on the grill. While those were grilling I roasted some fresh kale in the oven, seasoned with a dash…

Iron Skillet Chicken- Oven Roasted
Winner winner, Sunday chicken dinner. Everyone needs their go-to Sunday dinner. When the in-laws are coming over. When you don’t want to prep in the kitchen all day. When you can one-and-done it. And this is my new go-to. It’s aromatic. It’s crispy. It’s juicy. It’s pure heaven. There’s something beautiful about roasting a whole chicken. It makes for so many meals and bone broth too. And there’s something even more beautiful about cooking it in an iron skillet. Where the chicken cooks in those juices and soaks up every last ounce of flavor. It roasts perfectly. The skin crisps up. The flavor is so good. And the skillet…

Beef Stew with Sweet Potatoes- Whole 30 Friendly
I’m just a girl, standing in front of a stove, asking for dinner to make itself. Fortunately this wasn’t quite as difficult and time consuming as I imagined in my mind it would be. And keeping it simple and CROCKPOT friendly made it that much easier on our busy schedules. Ingredients: 1 lb lean stew meat (can sub chicken) 2 tsp EVOO 2 medium sweet potatoes, diced & peeled 2 large red potatoes, diced & peeled 1 c chopped carrots 1 large green pepper, diced 2 tbsp minced yellow onion 1 can diced tomatoes 2 tsp oregano 1 tsp garlic salt 1 c beef stock (Whole 30 approved) Himalayan sea…

Easy Chicken Burrito Bowls
We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend. I mean, wow. Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven. We ate there twice. Then we found Nashville Street Tacos… agghhh! More deliciousness! I couldn’t get enough southwest style fare (yeah, in Nashville, I know). So when we got home I decided I was going to throw in a few similar style southwestern flair dinners for this weeks menu. Last night we did a deconstructed chicken burrito. It was heavenly. One happy husband, and three happy kids. And I had to stop myself from going…

Beef and Butternut Squash Stew
Ohhhhhhhh the aroma that comes from the kitchen when I make this stew is enough to make the neighbors mouths water! And any meal that’s out of the “norm” that my kids try and actually eat a few bites of is a win. The husband loved it and I knew he would. Meat. Everything in one bowl. No rabbit food. Win! This is hands down one of my favorite 21 Day Fix & Fix Extreme recipes! Ingredients; 1 lb lean (trimmed) beef stew meat 1 medium butternut squash (chopped into 1/2-1″ cubes) 1 cup low sodium beef broth (can use water and 1 tsp low sodium beef bouillon)…
