    Crockpot Salsa Chicken Tostadas

My favorite food group is salsa.  Hands down.  It’s my favorite condiment.  My favorite dip.  I eat it on eggs.  On top of a turkey burger.  And I use it as a marinade.  And taco Tuesday is one of my favorite days of the week because of salsa.   This is one of my favorite creations.  Easy.  Simplified.  Clean.  And crockpot friendly.  Perfect for a quick, healthy meal, and to satisfy those taco cravings!  Enjoy! Ingredients:  3-4 medium/large chicken breasts 1.5-2 cups organic/all natural salsa (I use Organic Jack’s from Costco) 1/2 medium onion, sliced For the Tostadas:  Corn tortillas (4-8) Cooking spray Directions:  In a medium crockpot sprayed with…

The Truth About Sugar… Why It’s Making Our Society Fatter

Let’s talk about sugar and it’s VICIOUS cycle. Cravings. Not getting full. Our bodies need carbohydrates for energy. Sugar is the simplest form of carbohydrates meaning our body uses them instantly and we remain hungry. Artificial sweeteners/high fructose corn syrups, candy, soda, can trick our body and release a chemical (dopamine) aka the “feel good” chemical that gives us a high and we CRAVE it more. Eat a candy bar. Chances are it’ll “satisfy” that craving and 20 minutes later you’re craving something else. Don’t get me started on food addictions. That’s another blog post to come.    When our bodies encounter artificial ingredients they don’t know how to store…

    SautƩed Kale and Tempeh Salad

We challenge ourselves to do a meatless Monday in this house because it gets us out of our grilled chicken and ground turkey comfort zone.  Sometimes I get that “look” from my husband.  The look where I put his plate in front of him and he looks at me with that head cocked suspicious puppy look- like “what are you trying to get me to eat”? Well.  For a man who grew up his whole life hunting and eating wild game, I’m pretty impressed when he tries what I make, even if it goes against his caveman ways! Kale and tempeh sautĆ©e was one that I didn’t expect him to…
