Turkey Pumpkin Chili
Sweet & Savory Turkey Pumpkin Chili I don’t know if I’m the only one who cooks like this, but I’ll start thinking up a recipe a week or so before I make it. I literally let it simmer in my brain. I think of things I want to add to it, how I want it to taste, what the texture and consistency should be. Then I get hangry. I start with the mouthwatering, drooling stuff. And I know I have to make it. Today I intended to make a chicken butternut squash soup in the crockpot but life got in the way and was saving this chili for the weekend…

Destin Leadership Retreat 2016 Recap
Words can’t begin to describe the awesomeness that was my recent 4 day trip to Destin for our Beachbody Leadership Retreat. As a busy momma to 3 young girls, a recent nursing school graduate, and a wife to a busy, traveling husband, it was clear that I needed a vacation away and this was more than what I needed, just for my body, mind, and soul. There’s something about being around a group of people with similar goals, positive attitudes, and a desire to commit to inspiring others to meet their needs. I recently celebrated my 2 year anniversary of becoming a Beachbody coach and honestly when I started I…

Taco Stuffed Spaghetti Squash
Fall is here. So much squash. We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash. Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night). But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it. And it was everything I dreamed it would be and more! My husband approved. He’s not a squash eater by any means so it wasn’t easy to come up with something…

Best Fish Tacos Ever
My dad is a carnivore. He is the grillmaster. The king of BBQ. Definitely a meat and potatoes type of guy. I think of Ron Swanson from Parks & Rec when I think of my dad! Anyway, my parents came for dinner the other night and my dad asked that I make my delicious fish tacos and it blew me away. Really?! Fish tacos? So I upped my game, added a little bolder flavor and flair and whipped up these bad boys and sure enough he loved them! So I had to share them with all of you. I added a cilantro lime slaw and fresh guacamole (something…

Roasted Buffalo Cauliflower Salad
Veggies that taste like you’re not eating veggies… No brainer! A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites! I’m in love!
