Superfood Chicken Chili (crockpot)
This soup came to fruition after looking through my fridge/pantry, deciding I needed to go grocery shopping, but with a barfy kid, feeling quarantined to the house, I decided I needed to use up what was left of my previous week’s meal prep/grocery trip first.
Enter: Superfood Chicken Chili
And let me tell you… this turned out so much better than I imagined!
This could easily be done in an Instant Pot too- but I haven’t purchased mine yet!

Ingredients:
2-3 medium/large chicken breasts
3/4 c lentils, raw, washed
2 c organic vegetable broth
1 can organic fire roasted tomatoes
1 large green pepper, diced
3 large carrots, peeled and diced
2 c kale, finely chopped
1/2 c frozen edamame
Spices:
2 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/4 tsp cinnamon
Sea salt/black pepper to taste
Directions:
In a crock pot, place chicken, tomatoes, broth, pepper, carrots, and lentils. Cook on low 4-6 hours. Add kale and edamame. Stir. Cover and turn to warm for 5 minutes.
Serve and enjoy! Can top with 1 tbsp of hemp seeds too!
