Unicorn Bark!
It’s truly magical.
That mom moment when you whip up a healthier snack for your kids and they actually like it. And eat it. Maybe it’s because I used the word unicorn. It seems that if you put the word unicorn in front of anything it creates a lot of hype. Or if you add just enough color and sprinkles.
“Moommmmm… I don’t want broccoli for dinner.”
“But it’s unicorn broccoli!”
“YUUMMMMM!!! Can I have seconds?!”
It’s that easy.
Last night we whipped up this batch of yumminess. Protein packed, nothing artificial (except for the sprinkles!), and satisfies that sweet tooth- and made for a perfect treat for the kiddos!
We hope you enjoy it as much as we did.
Ingredients:
2 scoops vanilla (vegan) Shakeology
1 scoop strawberry (vegan) Shakeology
3/4 c low fat strawberry Greek yogurt*
3/4 c low fat blueberry Greek yogurt
3/4 c low fat vanilla Greek yogurt
3 tsp honey, divided
3 tbsp vanilla unsweetened almond milk, divided
1/2 c frozen strawberries
1/2 c frozen blueberries
1/2 c frozen mango
Sprinkles
Toasted coconut, optional.
*I use the Simply Balanced Target brand of yogurt
Directions:
In a blender, blend blueberry yogurt, frozen blueberries, 1 scoop vanilla Shakeology, 1 tsp honey, 1 tbsp almond milk. Set aside.
Repeat with strawberry yogurt, strawberries, honey, strawberry Shakeology, and almond milk. Set aside.
And again with vanilla Shakeology, mango, vanilla yogurt, honey, and almond milk. Set aside.
Drop big dollops of each into 9×9 pan lined with parchment paper. Swirl knife through yogurt mixture to create a whimsical pattern. βΊοΈπ¦π
Top with sprinkles.
Freeze 2-3 hours. Cut into 2-3 inch squares. Top with additional sprinkles and coconut.
