Whole 30 Nachos- The Game Changer
Halfway through Whole 30 and all I can think about is nachos. And husband made a pizza for the girls. And Bon Jovi is playing in my head…
“Woahhhh! We’re halfway there. Woahhh livin’ on a prayer…”
Halfway. Day 15. But who’s counting.
Admittedly I do feel pretty great. I’ve moved past the tired and sluggish stage into “Hell yeah I can do this!”
It’s only 30 days, right? We can do anything for 30 days.
But some days we just need nachos. So I whipped these up and they totally did it for me. The crunch. The guac. The ground “taco” turkey. It was heaven.
I hope your little nacho-craving Whole 30 self, maybe the reason why you’ve found my blog, is every bit as satisfied as I was!
And these are definitely on my menu for the next couple weeks!
Ingredients:
4 small/medium red potatoes sliced on the mandolin
EVOO spray
Sea salt
Parsley
1 lb lean ground turkey
1/2 tbsp chili powder.
Chopped romaine or butter lettuce
Fresh salsa
Guacamole (I like Wholly Guacamole)
Directions:
Slice potatoes thin, pat dry, and spray with EVOO spray. Sprinkle with sea salt & parsley.
Bake on a lined cookie sheet at 400* for 10 minutes until edges brown & crisp.
Cook turkey with chili powder & 1/2 c salsa in skillet until brown. Drain.
Serve turkey over potatoes, top with lettuce, salsa, & guacamole.
