Crockpot Salsa Chicken Tostadas
My favorite food group is salsa. Hands down. It’s my favorite condiment. My favorite dip. I eat it on eggs. On top of a turkey burger. And I use it as a marinade. And taco Tuesday is one of my favorite days of the week because of salsa.
This is one of my favorite creations. Easy. Simplified. Clean. And crockpot friendly. Perfect for a quick, healthy meal, and to satisfy those taco cravings! Enjoy!
Ingredients:
3-4 medium/large chicken breasts
1.5-2 cups organic/all natural salsa (I use Organic Jack’s from Costco)
1/2 medium onion, sliced
For the Tostadas:
Corn tortillas (4-8)
Cooking spray
Directions:
In a medium crockpot sprayed with olive oil cooking spray, place chicken breasts. Top with onion and salsa. Cook on low for 4-6 hours until chicken shreds easily and onions are nearly clear.
Preheat oven to 400*. Spray a baking pan and arrange 4 tortillas. Spray tortillas with cooking spray. Bake at 400* for 3-5 minutes on each side until edges turn golden brown.
Top tostadas with chicken mixture. Add shredded romaine, avocado, more salsa, plain Greek yogurt, shredded cheese, per taste. Enjoy them as much as we did!
