Seven Layer Taco Dip (Clean Version)
I put my hand upon my chip. When I dip you dip we dip!
Happy taco Tuesday! One of my favorite things in the entire world is tacos! And dips. So it only made sense to combine the two! This is the vegetarian version but you can add ground beef or turkey and layer it on the bottom for some added protein! A little fresh cilantro on top and this is a healthy appetizer or a one dish dinner! Enjoy!
Ingredients:
2 cans organic refried beans
1 lb ground turkey/beef (optional)
1 16 oz jar all natural salsa
1 16 oz container lowfat plain Greek Yogurt
3 c romaine lettuce, chopped
1 c lowfat shredded cheese
1 avocado, diced
1 tomato, diced
Fresh cilantro, chopped
Directions:
Open beans and spread them with a spatula into a 13×9 pan. If using turkey/beef, sprinkle cooked mixture over the beans. Top with greek yogurt, spreading with spatula over beans. Add salsa and spread over Greek yogurt. Dice avocado and tomato and sprinkle over salsa. Top with shredded cheddar cheese, chopped romaine, and chopped cilantro. Enjoy!
You can serve these with tortilla chips, baked wheat tortillas cut into tortilla pieces, or alone.
