Clean Eating Crockpot Fajitas
Ohhhhhhhh do we love fajitas in our house! I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas. These are super simple, clean, and low carb too! And always leave us full and satisfied!

Ingredients:
3 large chicken breasts, thawed
1 large green pepper, sliced
5-6 sweet mini peppers, sliced
1/4 onion, sliced (optional)
1 tbsp chili powder
1 tbsp cumin
1/2 tsp sea salt
1/4 tsp chipotle chili seasoning
Juice of 1 lime
Romaine lettuce leaves
Lowfat shredded cheese or Plain lowfat Greek yogurt
Salsa
Cooked brown rice (optional)
Instructions:
Thaw chicken and place in bottom of sprayed crock pot. Mix chili powder, cumin, sea salt, & chili seasoning together and sprinkle over chicken. Add sliced peppers/onions to crockpot. Squeeze juice of lime over the top. Cook on low for 5-6 hours. Shred chicken with a fork. Scoop fajita mixture into lettuce leaves. Top with brown rice, 1 tbsp shredded cheese or Greek yogurt, and 1 tbsp salsa. Enjoy!
