Beef and Butternut Squash Stew

Ohhhhhhhh the aroma that comes from the kitchen when I make this stew is enough to make the neighbors mouths water!  And any meal that’s out of the “norm” that my kids try and actually eat a few bites of is a win.  The husband loved it and I knew he would.  Meat.  Everything in one bowl.  No rabbit food.  Win!  This is hands down one of my favorite 21 Day Fix & Fix Extreme recipes!

Ingredients; 
1 lb lean (trimmed) beef stew meat
1 medium butternut squash (chopped into 1/2-1″ cubes)
1 cup low sodium beef broth (can use water and 1 tsp low sodium beef bouillon)
1 medium red pepper chopped
3-4 mini sweet yellow/orange peppers, chopped (or can sub green pepper)
4 tbsp chopped yellow onion
2 medium tomatoes, chopped
1 tsp garlic powder
2 bay leaves
1 tsp EVOO
Sea salt & black pepper to taste
Fresh chopped parsley
Instructions:  
Brown beef in skillet with oil over medium heat for 5 minutes.  Add onion and peppers, stir and cook for another 5 minutes.  Add tomatoes, broth, and remaining seasonings and bring to a boil.  Reduce heat and simmer 10 -15 minutes.  Add squash, stir occasionally, and simmer for 8-10 minutes until stew has thickened and squash is tender.  Remove bay leave.  Serve and sprinkle with chopped parsley.  Enjoy!
