    Iron Skillet Chicken- Oven Roasted

      Winner winner, Sunday chicken dinner.  Everyone needs their go-to Sunday dinner.  When the in-laws are coming over.  When you don’t want to prep in the kitchen all day.  When you can one-and-done it.  And this is my new go-to.  It’s aromatic.  It’s crispy.  It’s juicy.  It’s pure heaven. There’s something beautiful about roasting a whole chicken.  It makes for so many meals and bone broth too.  And there’s something even more beautiful about cooking it in an iron skillet.  Where the chicken cooks in those juices and soaks up every last ounce of flavor.  It roasts perfectly.  The skin crisps up.  The flavor is so good.  And the skillet…

    BBQ Turkey Sliders

    Burgers.  Burger love.  Oh yeah…  One of my favorite cheat meals is a juicy burger.  So we opted for a healthier slider recipe for SuperBowl Sunday right here!  Ground turkey.  Organic BBQ sauce.  Topped with romaine and sliced avocado.  These are a kid favorite too!  Enjoy!   Ingredients:  1 lb lean ground turkey 3 tbsp organic honey BBQ sauce 1/4 cup ground flaxseed Sea salt and black pepper to taste Our Fav Toppings:  Cheese Avocado Dijon Mustard Romaine Lettuce Roma Tomatoes Directions:  In a large bowl, combine turkey, BBQ sauce, flaxseed, salt and pepper (I mix it with my hands!).  Shape into 8 small burger patties.  Indent each one with…

    Deer Season Chili

    We live about 2 hours from my in-laws.  When the weather gets cold we can count on heading that way at least one weekend each month.  Hunting season starts.   The men trudge out at 4:30 am and we sleep snugly under fuzzy blankets until the sun comes peeking in the windows.  We emerge in slippers to a pot of coffee and a batch of pancakes off the griddle and spend the day doing crafts, playing with Playdough, and preparing a yummy dinner for when they return.   One of my favorites is my mother-in-laws chili.  There’s something about a big pot of chili on a Sunday afternoon to fill up…

    Meal Prep Madness

    We are the epitome of busy.  We have three girls ages 8, 5, and 3.  My husband travels some for work.  I am a nurse (not currently practicing).  I run a business from my home helping people meet their fitness and nutritional goals.  We workout daily.  I grocery shop.  I run monthly accountability groups for my clients.  We prepare our meals fresh.  We have even been known to do fitness competitions.
