    Honey Peanut Soy Glazed Salmon

    The perfect harmony of soy, peanut, and honey.  Just when I think Mexican cuisine is my favorite, something like this takes me back to loving Asian inspired foods.   Today’s lunch was super simple.  Honey, peanut, and soy glazed salmon with just a touch of ginger. Some stir fry veggies, over a bed of red quinoa and this momma is set!   Ingredients:  4 salmon filets, thawed  1 16oz bag stir fry veggies  Quinoa, cooked  1 tbsp liquid aminos (or low sodium, natural soy sauce) 1 tbsp PB2  1 tbsp wildflower honey 1/2 tsp ground ginger.  Directions:  Lightly dust salmon filets with ginger.  Mix PB2, aminos, and honey together in…

    BBQ Salmon Tacos with Homemade BBQ Sauce

    Summer.  Fire up that grill.  Get that summer sweet corn out.  It’s time to BBQ!   If you’ve been following my blog, you know I love a good Taco Tuesday recipe- especially fish tacos.     Chipotle Lime Fish with Citrus Rice

    I think we found a winner.  Competition prep time again and you know what that means?  Tilapia for days!  My husband is thrilled (insert sarcastic eye roll here). He’s not a seafood lover.  So, I have to be creative in order to get him to eat it! When we were in Florida the first week of January, they were sampling some chipotle rubbed salmon at the fresh market.  It was delicious.  But he’s not a salmon fan.  So I whipped up a little chipotle like marinade and soaked the tilapia in it for a bit, and it turned out excellent!  Paired with my own little citrus rice creation and some…
