Yesterday we hosted a little housewarming party/BBQ and where I love a fridge full of leftovers, I get tired of eating the same thing. So I whipped up a simple salad with some leftovers. Enjoy! Love! , Mediterranean Quinoa Chicken Salad For the quinoa salad: 1 c quinoa 2 c water (Cook according to package) When cooked and fluffed with fork, add: 1 medium cucumber, diced 1 large (or 3 Roma) tomato, diced1/2 green pepper, chopped 1/4 red onion, minced 2 tsp EVOO 1/4 c roasted red pepper dressing 1/2 tsp Himalayan sea salt 1 tsp oregano Toss ingredients together. Strawberry Balsamic Chicken Salad
My favorite salad. Simple. Clean. Healthy. Something about strawberries and balsamic vinegar that makes a delicious combination! Ingredients: 1 chicken breast, grilled 2 c spinach 1 c diced strawberries 1 tbsp feta cheese 1 tbsp chopped walnuts 2 tsp chia seeds 2 tsp balsamic vinegar Directions: Place spinach in bowl. Add walnuts, feta, diced chicken breast, chia seeds, and strawberries. Drizzle with balsamic vinegar. Enjoy!!

Veggies that taste like you’re not eating veggies… No brainer! A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites! I’m in love! Vegetarian Couscous Salad This is a favorite of mine. A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.
