Quinoa Stuffed Mini Peppers
Easy. Simple. Delicious. An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack. This was one of those “come together” moments. I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born! Enjoy! Ingredients: 6-8 mini peppers 2 c steamed chopped kale 1 c cooked quinoa 1/4 c (extra) diced peppers & red onion Feta cheese, optional Directions: Cook quinoa according to package.
