No meat Friday! Lenten season for us. That means no chicken, beef, pork, turkey, etc. Fish is fine. But a husband who isn’t a big fan of seafood, my options can get pretty limited. Vegetarian Quinoa Black Bean Bites
One of my favorite recipes and perfect for meatless Monday! We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well. The added protein from the black beans and the quinoa really helps to fill up from these delicious little bites of yumminess! Plus, the kiddos love them, they’re quick, easy, and make for a great lunchbox treat too!
