    Garlic Butter Shrimp “Linguini” With Zoodles

    That day-after-Christmas food hangover… you know the one.  Too much cheese.  Too many crackers.  Pie up to your eyeballs.  Potato casserole. Spiked egg nog. All of the goodies. Back on track today.  With a fridge full of leftovers. I opened my fridge, overwhelmed with what was left, and just wanted something light & simple.  So I grabbed the leftover shrimp from the shrimp cocktail.  Some veggies from the veggie tray.  The zucchini that never got roasted as planned, and some Parmesan cheese from the au gratin potatoes.  5 minutes later- a light, healthy lunch happened.  And it happened to be delicious!     Superfood Smoothie Bowl- Easy Lunch!

      Busy mom life at lunchtime :  – Eating PBJ crusts  – 2 bites of chicken nuggets  – 4 leftover baby carrots  – grabbing a banana mid diaper change  – forgetting to eat  – falling into a heap of exhaustion at 9 pm realizing 4 loads of laundry need to be folded  Y’all.  I’m T. I. R. E.     Strawberry Balsamic Chicken Salad

      My favorite salad.  Simple. Clean.  Healthy.  Something about strawberries and balsamic vinegar that makes a delicious combination!   Ingredients: 1 chicken breast, grilled 2 c spinach  1 c diced strawberries 1 tbsp feta cheese  1 tbsp chopped walnuts  2 tsp chia seeds  2 tsp balsamic vinegar  Directions:   Place spinach in bowl.  Add walnuts, feta, diced chicken breast, chia seeds, and strawberries.   Drizzle with balsamic vinegar.   Enjoy!!

    Best Fish Tacos Ever

    Roasted Buffalo Cauliflower Salad

    Veggies that taste like you’re not eating veggies… No brainer!  A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites!  I’m in love!   And as an added bonus, last night’s roasted buffalo cauliflower made for a super yummy lunch today!     Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

    When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty. The chicken was cooked perfectly.  I still get warm fuzzies thinking about it.   Today.  Warm fuzzies.  This lunch was hands down one of the best things I’ve made in a long time.  It was simple and delicious.  Creamy, clean, healthy and hit the spot.  Nothing more.  Nothing less.  Just perfection.     Meal Prep Madness

    We are the epitome of busy.  We have three girls ages 8, 5, and 3.  My husband travels some for work.  I am a nurse (not currently practicing).  I run a business from my home helping people meet their fitness and nutritional goals.  We workout daily.  I grocery shop.  I run monthly accountability groups for my clients.  We prepare our meals fresh.  We have even been known to do fitness competitions.
