    Thai Peanut Zoodle Bowl

Iโ€™ve been on a cooking kick lately. Not just the same old staples.  But adding in a lot of variety and yummy, exotic flavors too.  And all in less than 30 min.  Ainโ€™t nobody got time for being in the kitchen all day. Last week I was craving curry.ย  So I made a yummy chicken curry chickpea cauliflower stew. It was heavenly and Anniston, my 5 year old, loved it too. Yesterday I meal prepped zucchini, toasted quinoa, and tomato egg muffins for breakfasts for the week. They have not disappointed. Today spicy Thai peanut noodle bowl.  Only I didnโ€™t have noodles.  But I did have zucchini.  Todayโ€™s zoodle bowl…

    Spaghetti Squash Lasagna

Iโ€™m like Garfield. If I make a pan of lasagna Iโ€™m going to eat it all. Itโ€™s a strength and a weakness all at the same time. But, I found a healthier alternative and itโ€™s just as good. My husband ate it and didnโ€™t complain so that counts as a win, right? Lower carb, not overloaded with sodium, simple ingredients, and easy assembly. Do me a favor, let me know what you think, mmmkay? Ingredients: 1 large or 2 small spaghetti squash, roasted and shredded into โ€œspaghettiโ€. 1 jar organic/clean pasta sauce, I prefer tomato basil or garden veggie 2 c plain Greek yogurt (you can sub ricotta cheese) 1…

Garlic Butter Shrimp โ€œLinguiniโ€ With Zoodles

That day-after-Christmas food hangover… you know the one.  Too much cheese.  Too many crackers.  Pie up to your eyeballs.  Potato casserole. Spiked egg nog. All of the goodies. Back on track today.  With a fridge full of leftovers. I opened my fridge, overwhelmed with what was left, and just wanted something light & simple.  So I grabbed the leftover shrimp from the shrimp cocktail.  Some veggies from the veggie tray.  The zucchini that never got roasted as planned, and some Parmesan cheese from the au gratin potatoes.  5 minutes later- a light, healthy lunch happened.  And it happened to be delicious! Low carb.  Light.  Full of protein & veggies. Enjoy!…

Italian Chicken Stuffed Spaghetti Squash- Low Carb

Oh sweet baby lord in heaven… I wish  the internet had smell-o-vision… this might just be at the top of things I’ve whipped up that I could eat every day and never get tired of it. Autumn has set in and that means all things squash.  I’m like Bubba Gump.  Squash salad, squash pancakes, squash cheesecake, squash chili, stuffed squash. And as I was running out the door today to pick up a spaghetti squash for tonight’s dinner, I realized I needed to do something with it- so I tossed a few chicken breasts in the crockpot, added some marinara and tomatoes, seasonings, and finished it off looking like this…

    Bell Pepper Nachos- Low Carb

There comes a time in life where you must make a decision.  Are you going to celebrate Taco Tuesday with amazing flavor and flair… or are you going to let it pass you by? For us, Taco Tuesday is a regular occurrence each week, and don’t get me wrong- we never get tired of tacos, but sometimes we like a little variety in what we eat every Tuesday.  And occasionally we switch up our nutrition routine and do a little low-carb here and there depending on our goals and results we’re working toward.  This week was one of those weeks.   This gal could live on chips and salsa alone…

    Honey Balsamic Chicken Stir-Fry

Tonight’s dinner took 10 minutes start to finish.  1-2 minutes to chop chicken and veggies (we grill a bunch of chicken on Sunday for meal prep during the week).  7 minutes to cook it all in the skillet.  1 minute to plate and serve!   ***Cauliflower rice is such a healthy alternative especially if you’re gluten free or following a low carb plan.  You can’t even tell the difference!  My husband loved it and he doesn’t eat cauliflower!   For the Stir Fry:  2 c chopped chicken (grilled it yesterday- we use it for meal prep!) 1 pkg frozen riced cauliflower  1 large red bell pepper- diced 2 c…

    Taco Stuffed Spaghetti Squash

Fall is here.  So much squash.  We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash.  Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night).   But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it.  And it was everything I dreamed it would be and more!  My husband approved.  He’s not a squash eater by any means so it wasn’t easy to come up with something…

Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty. The chicken was cooked perfectly.  I still get warm fuzzies thinking about it.   Today.  Warm fuzzies.  This lunch was hands down one of the best things I’ve made in a long time.  It was simple and delicious.  Creamy, clean, healthy and hit the spot.  Nothing more.  Nothing less.  Just perfection. If you’re looking for a new favorite chicken salad, I hope this is it. Enjoy!   Ingredients:  For the wrap:  1 large grilled chicken breast, diced  1/2 c green grapes, sliced  1 tbsp sliced…
