    I can’t get enough “holiday smell” in my house.  It’s an addiction.  I put away my pumpkin spice candle yesterday and busted out holiday spice and that cinnamon smell took over my house last night.     Superfood Maple Pumpkin Pancakes

    Mummy Pizzas

    Does anyone else love coming up with festive recipes for each holiday?  Or trying things out from Pinterest?  We went for it tonight!  And they turned out great! My kiddos love English muffin and sandwich thin mini pizzas and we just had to make them into mummies for Halloween!   Ingredients: Whole grain English Muffins or Sandwich Thins Organic tomato/basil pasta sauce or marinara sauce  Sliced mozzarella cheese Sliced black olives Directions: Place thins on parchment paper lined sheet or foil (spray with cooking spray).   Top with sauce and place cheese slices across.  Top with black olive eyes.  Bake at 400* for 10-13 minutes until cheese bubbles.  Enjoy!  …

    Black Bean Lentil Stew

    On Sunday’s we crockpot.  Football, crisp autumn air, crunching in the leaves, wearing scarves, eating soups and stews out of cold weather bowls and getting that warm, fuzzy feeling.   This meal was created by total happenstance.  I wanted a crockpot dinner but didn’t have a plan so I worked with what I had.  And it worked.  My husbands words:  “Oh this is good. It’s not to tomatoey.     Creamy Chicken and Rice Soup (Crockpot)

    Turkey Meatballs with Spaghetti Squash

    Everyone’s favorite.  Spaghetti and meatballs.  These kids would eat spaghetti for breakfast and dessert if I’d let them.     Dark Chocolate Shakeology Granola Bars

    It’s 10:00 pm.  Do you know where your husband is? Mine’s in the pantry.  Eating something with peanut butter.  If it’s not him it’s me.  Usually I need chocolate too.   So I needed a solution.  Something that would make for a good “late night bite” without feeling like I’m ruining the days nutrition.  Sorry Ben and Jerry, but you guys don’t play fair.   Last night I whipped these up and stick them in the fridge.  My girls loved them for breakfast and I’m snacking on one as we speak.  Hopefully I’ll have some left when my husband gets home from his trip tomorrow!    Dark Chocolate Shakeo Granola…

    Vanilla Protein Granola (with Shakeology)

    Saturday mornings are for lounging, for coffee, and for listening to our kids run around and wrestle and giggle.  We absolutely cherish these moments.     Zucchini Chips (Fixate Cookbook)

    These turned out to be just perfect!  And when you can get away with serving your kids “chips” for dinner, it’s a win-win!  Keep an eye on these while you’re cooking, if they’re cut too thin they can crisp up quickly.  I tried turning the temp up a bit to cook them quicker and they did ok, but cooking low and slow is ideal. Zucchini Chips Ingredients:  2 large zucchini, sliced thinly with mandolin slicer or paring knife (be careful!) 3-4 tsp EVOO Sea salt to taste Instructions:  Preheat oven to 225*.  Slice zucchini thin.  Pat dry with paper towel.  Drizzle lightly with oil,  Bake on parchment lined cookie sheets…

    Red, White, and Blueberry Muffins

    By the time 4th of July rolls around, we’re ready for some yummy treats. Summer produce is in abundance and we always have too many strawberries and blueberries in our fridge.  And I never let fresh produce go to waste.  We can only drink so many strawberry and blueberry smoothies so it was time for a healthy snack recipe and I think the girls and I created a good one.  A healthy, clean-eating,  sugar-free, delicious muffin that could be mistaken for a cupcake if you ask me!   Ingredients: Dry Ingredients: 3/4 cup quick oats 1 cup whole wheat flour 1 tsp baking soda 1 tsp baking powder 1/4 tsp…
