Day 24 of Whole 30 and I still haven’t had bacon. Not that there’s anything against bacon. I just know how much of it I’ll eat. It’s shameful. Easy. Simple. Delicious. An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack. This was one of those “come together” moments. I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born! Enjoy!
