    Breakfast Quiche- Whole 30 Approved

When I started Whole 30 I thought, how am I going to make it through on scrambled eggs and grilled chicken.  I need more variety in my life.  Around day 9 of eating mostly scrambled eggs, potatoes, and chicken I new I needed to spice things up or I was going to get bored.  And reach for the chips.  And I’m determined to get through these 30 days with no cheats.  Day 19 & going strong.   So I whipped up a yummy “breakfast” quiche, I say breakfast lightly because this has been my dinner twice this week, it’s so good.  Sweet potato crust, ground turkey, and plenty of veggies. …

Embarking on the Whole 30 Journey… With Breakfast Hash

Hello 2017!  Hello “New Year, New Me”. I vowed I wasn’t going to overhaul my life this year.  I wasn’t going to make a “big change”.  I like the ME that I am.  I don’t need a new “me”. So,  I decided that I was going to pick a few things to improve where I needed to and focus on having more fun.  Living a little bit more.  Take more trips. Love harder.  Laugh more.  Give my kids so many snuggles that by 2018 they were sick of me!  And be a really good wife.  You know, one that doesn’t complain about the trash not being taken out, because…

    Butternut Squash Chicken Stew (Crockpot)

Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening! Ingredients:  1 Medium Butternut Squash, peeled and diced into 1 inch cubes 3 medium chicken breasts, thawed 2 cups organic vegetable (or chicken) broth 1 medium red pepper, diced 3/4 c frozen corn 1 tsp…

    Turkey Pumpkin Chili

Sweet & Savory Turkey Pumpkin Chili I don’t know if I’m the only one who cooks like this, but I’ll start thinking up a recipe a week or so before I make it.  I literally let it simmer in my brain.  I think of things I want to add to it, how I want it to taste, what the texture and consistency should be.  Then I get hangry.  I start with the mouthwatering, drooling stuff. And I know I have to make it.  Today I intended to make a chicken butternut squash soup in the crockpot but life got in the way and was saving this chili for the weekend…

    Taco Stuffed Spaghetti Squash

Fall is here.  So much squash.  We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash.  Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night).   But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it.  And it was everything I dreamed it would be and more!  My husband approved.  He’s not a squash eater by any means so it wasn’t easy to come up with something…

    Best Fish Tacos Ever

My dad is a carnivore.  He is the grillmaster.  The king of BBQ.  Definitely a meat and potatoes type of guy.  I think of Ron Swanson from Parks & Rec when I think of my dad!   Anyway, my parents came for dinner the other night and my dad asked that I make my delicious fish tacos and it blew me away.  Really?!  Fish tacos?  So I upped my game, added a little bolder flavor and flair and whipped up these bad boys and sure enough he loved them!   So I had to share them with all of you.  I added a cilantro lime slaw and fresh guacamole (something…

    Roasted Buffalo Cauliflower Salad

Veggies that taste like you’re not eating veggies… No brainer!  A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites!  I’m in love!   And as an added bonus, last night’s roasted buffalo cauliflower made for a super yummy lunch today! Topped with a little low-cal Greek yogurt ranch and this was absolute heaven!  Enjoy!   For the Cauliflower: 1 lb package frozen cauliflower  1/4 c hot wing sauce – I use Frank’s Red Hot  Coat frozen cauliflower in sauce evenly.  Spread on baking sheet covered in foil and sprayed with…
