    Seven Layer Taco Dip (Clean Version)

    I put my hand upon my chip.  When I dip you dip we dip!   Happy taco Tuesday!  One of my favorite things in the entire world is tacos!  And dips.  So it only made sense to combine the two!  This is the vegetarian version but you can add ground beef or turkey and layer it on the bottom for some added protein!  A little fresh cilantro on top and this is a healthy appetizer or a one dish dinner!     Easy Chicken Burrito Bowls

    We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend.  I mean, wow.  Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven.  We ate there twice.  Then we found Nashville Street Tacos… agghhh!  More deliciousness!     Clean Eating Crockpot Fajitas

    Ohhhhhhhh do we love fajitas in our house!  I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas.  These are super simple, clean, and low carb too!  And always leave us full and satisfied!     Vegetarian Quinoa Black Bean Bites

    One of my favorite recipes and perfect for meatless Monday!  We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well.  The added protein from the black beans and the quinoa really helps to fill up from these delicious little bites of yumminess!  Plus, the kiddos love them, they’re quick, easy, and make for a great lunchbox treat too!   Ingredients:  3/4c uncooked quinoa (I use Trader Joe’s organic white quinoa)1 can low sodium black beans3/4c salsa4-5 mini sweet peppers or 1/2 c diced green peppers 3/4 c shredded low-fat cheese1/2c frozen corn3 eggs2tsp garlic powder1tsp cumin1/2c chopped fresh…
