    Thai Peanut Zoodle Bowl

    I’ve been on a cooking kick lately. Not just the same old staples.  But adding in a lot of variety and yummy, exotic flavors too.  And all in less than 30 min.  Ain’t nobody got time for being in the kitchen all day. Last week I was craving curry.  So I made a yummy chicken curry chickpea cauliflower stew. It was heavenly and Anniston, my 5 year old, loved it too. Yesterday I meal prepped zucchini, toasted quinoa, and tomato egg muffins for breakfasts for the week. They have not disappointed.     Asian Chopped Chicken Salad

    Saturday Salad!!!  Ok.  So I had this yesterday but it was so good I’m making it for lunch again today. And the dressing is just delicious and inspired from the Fixate Cookbook .  Super simple and absolutely delicious- and 21 Day Fix approved! For the Salad:   Ingredients:  1 medium chicken breast, cooked and chopped into 1″ pieces 1 tsp sunflower seeds 2 c broccoli and carrot slaw For the dressing:  Ingredients 1/3 c rice vinegar 1/3 c low sodium soy sauce 1 tsp organic wildflower honey (or pure maple syrup)  2 tbsp grated ginger 5 tbsp sesame oil Combine first four ingredients for the dressing in a bowl, whisk to…
