If your “diet” or meal plan doesn’t call allow for pizza, you’re doing it wrong. When I start a new fitness program, when we meal prep, when we do a lot of what we do, it involves pizza. I put my hand upon my chip. When I dip you dip we dip! Happy taco Tuesday! One of my favorite things in the entire world is tacos! And dips. So it only made sense to combine the two! This is the vegetarian version but you can add ground beef or turkey and layer it on the bottom for some added protein! Easy. Simple. Delicious. An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack. This was one of those “come together” moments. I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born! Enjoy! I think we found a winner. Competition prep time again and you know what that means? Tilapia for days! My husband is thrilled (insert sarcastic eye roll here). He’s not a seafood lover. I might be crazy. I might be certifiably insane. I’ve decided to tackle another competition. Bikini competition #3. March 26th. St. Louis, MO.
