Fall is here. So much squash. We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash. Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night). But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it. And it was everything I dreamed it would be and more! 21 Day Fix Turkey Taco Cups
The easiest of easy, healthy, and 21 Day Fix friendly dinners. 10 minutes skillet to table. And always a hit with the whole family. Only 6 ingredients total! Enjoy and share! Ingredients: 1 lb lean ground turkey 1 c of your favorite salsa (I used organic chipotle lime from Aldi) 1 can black beans 1 c frozen corn, thawed Romaine lettuce leaves Greek yogurt Directions: In a skillet over medium-high heat, brown turkey with salsa. Sloppy Joe Stuffed Sweet Potatoes
There comes a moment when I’m putting together a recipe when I pause and close my eyes and imagine how it’s going to taste when it’s complete. Not too often do they come out EXACTLY as my tastebuds had envisioned but this was one of those recipes that did.
