    Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

    When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty. The chicken was cooked perfectly.  I still get warm fuzzies thinking about it.   Today.  Warm fuzzies.  This lunch was hands down one of the best things I’ve made in a long time.  It was simple and delicious.  Creamy, clean, healthy and hit the spot.  Nothing more.  Nothing less.  Just perfection.     Turkey Meatballs with Spaghetti Squash

    Everyone’s favorite.  Spaghetti and meatballs.  These kids would eat spaghetti for breakfast and dessert if I’d let them. So what do moms do?  We squeeze in veggies wherever we can!  We switch it up, we try new things and we pray for success!  Tonight we did a little twist on an old favorite and everyone cleaned their plates!   Even daddy!   In our house when everyone cleans their plates, we have dessert!  And tonight, it won’t be spaghetti!   Turkey Meatballs  Ingredients:  1 lb lean ground turkey 1/3c ground flaxseed meal 1/4 c almond milk  3 tbsp diced onion 2 cloves minced garlic 1/4 c chopped parsley or spinach…

    Breakfast is a disaster at our house.  One kid off to first grade. One momma off to nursing school. One daddy off to work, and sometimes two little kids off to daycare when Grandma’s not here.  I don’t have time to make 5 different breakfasts.  I don’t have time to make my own breakfast some days but it’s the most important meal of the day so I don’t allow myself to skip it.  This is where meal planning comes into play.  Because we try to eat clean, natural foods and avoid artificial ingredients at every opportunity, a fresh, healthy breakfast is important to us.  So a little time this morning…
