Kid Favorite Mini Muffins
A super simple breakfast and snack muffin recipe that can be whipped up quick is a lifesaver! We baked these the other night for breakfasts and snacks! They’re clean/healthy and nutritious too and perfect for those busy back to school mornings or afternoon snacks! Kid Favorite Blueberry Muffins: Ingredients: 1.5 c quick cook oats 1/2 c whole wheat or almond flour 1 tsp baking powder 1/2 tsp cinnamon 1 large mashed banana 1 c vanilla unsweetened almond milk 1/4 c honey 1 egg, beaten 1/2 c blueberries (or chopped strawberries, blackberries, or 3 tbsp chocolate chips! 😉) Pinch of sea salt Directions: Mix everything together in a bowl. The easiest of easy, healthy, and 21 Day Fix friendly dinners. 10 minutes skillet to table. And always a hit with the whole family. Only 6 ingredients total! Enjoy and share! Ingredients: 1 lb lean ground turkey 1 c of your favorite salsa (I used organic chipotle lime from Aldi) 1 can black beans 1 c frozen corn, thawed Romaine lettuce leaves Greek yogurt Directions: In a skillet over medium-high heat, brown turkey with salsa.
